Sure, pork ribs are big in Memphis, but you rarely eat those at home. For luaus, parties, gatherings, etc, you have 3 staples:

Hand-pulled pork shoulder,
BBQ beans,
and Cole Slaw.

This is from a restaurant called "The Pig." It has branches in Downtown Memphis and Southaven, Mississippi.

For some odd reason, I didn't like the Slaw and beans.

(BTW, you usually eat the pork on plain-Jane hamburger buns from the local grocery store {Memphis residents consider that the highest form} and you're supposed to top the pork with, wait for it, Cole Slaw!)

Oh wow. This is one of the staples of southern food, a HUGE must! More importantly, the cole slaw with the BBQ!!! The only BBQ that I've had recently is Carolina, it's really good, but nothing compares to Georgia or SC BBQ.
